For a birthday cake, enter the Black Forest For a birthday cake, enter the Black Forest Thursday was another birthday for oldest brother Jay (of “Uncle Jake’s Favorite Recipes” to regular readers), and while MT & I offered to make dinner Sunday during his bi-weekly visit at the West Hazleton homestead, he already had planned a meal, but no dessert. So we agreed to make a birthday cake. So we agreed to make a birthday cake. Last year, readers may recall, I made a molasses cake with Lego trees and a lone Lego mini-figure emerging from the forest to find a large footprint, presumably from a Sasquatch — an old theme with Jay. This time MT & I tossed around some cake ideas, and for some reason the Black Forest cake came to mind, something I haven’t made for decades. Jay had included it in his favorite recipes compilation, so he was sure to like it. Jay had included it in his favorite recipes compilation, so he was sure to like it. MT remembered seeing pictures of a Black Forest cake and asked if it had cherries on top, and I said sure, but since it’s a “forest” cake, trees would make sense. No, I didn’t put more Lego trees on this one. Been there, done that, and would’ve ruined the look of this visually appealing dessert while making a mess of the plastic trees. But I did cut some corners. But I did cut some corners. The first: I used a box cake instead of Jay’s from-scratch “yellow whipped cream cake” (recipe included below if you want to try it). When I took up baking in the 1970s, box cakes had a well-earned reputation of being dry and blah, but that’s just not true any more, and I figured the assembly of this cake was work enough. And because of the whipped cream icing, I whipped and assembled after driving from Wilkes-Barre to West Hazleton. The second: I couldn’t find a can of dark sweet cherries, either at Schiel’s or Wegmans. They had few cherries of any type in the canned fruit sections. Jay’s recipe considers this scenario and suggests using canned cherry pie filling. The second: I couldn’t find a can of dark sweet cherries, either at Schiel’s or Wegmans. A quick web surf suggested the paucity of cherries stems from things like a cold snap for growers and a shortage of workers both in orchards and factories. Whatever the reason, the use of pie filling cherries changes a couple things: The look, because they are redder than the dark sweet ones; the work, because it eliminates the need to cook up a syrup but also makes handling and chopping the cherries messier; and the flavor because, well, different cherries and a syrup you have no real control over. How you prep the chocolate changes the look as well, though with no real impact on flavor. Shaved chocolate that curls elegantly provides some real eye candy, but requires softening the chocolate a bit before using a vegetable peeler, then cooling the shaved chocolate. (Softening the chocolate is the concern for me. Nuke it in a microwave, even on medium with a lot of scrutiny, can still go quickly from too hard to melted mush). I opted to try a grater on the chocolate as is, but that produced mostly powder. MT took a crack at it with a peeler and eventually started to get some decent strips, but still not the curlicues. If you want the curled chocolate allure, I’d zap it for very brief stretches at a time, checking it every few seconds until it gets to the right peel-able softness.
